Nigiri and sake: the best of Japanese cuisine
in the heart of Basque Country
What is the most important ingredient in sushi for you? The owner of Kenji Sushi bar, after whom the establishment is named, reviles it is rice. He brings rice, as well as seasonings and sauces, from Japan. The fish and seafood of the highest quality that he uses are mainly local, but with an emphasis on making their taste as close to Japanese as possible. Thus, the melt-in-your-mouth tuna in his culinary creations is from the Andalucia, the most tender squid-chipirones are from Pasajes, but the scallops have to be brought from Japan and Russia. This is the only way to achieve the perfect combination for nigiri. According to Kenji, this is the main dish in his sushi bar. San Sebastián Details' recommendation is Toro marbled tuna carpaccio and Shirashi - a rice mini-bowl covered with fresh fish slices in sashimi style with red caviar topping. However, if you came for other traditional dishes, you will definitely find them here: any whim from rolls and Japanese ravioli gyoza to crispy tempura and mind-blowing ramen soup. The chef also took into account European preferences, adding to the menu familiar to many tastes like Philadelphia rolls. And as a tribute to San Sebastian - a gastronomic capital of Europe, an improvisation was born - hot rolls with local crab changurro. Thus, Kenji skillfully combines his Japanese mastery with the traditions of the Basque Country, where he moved more than twenty years ago to learn the secrets of local culinary masters. In 2013 he opened his first sushi bar and recently a new bar right in the heart of the busiest city market - San Martin. In both of his establishments, Kenji strives to recreate the atmosphere of a typical Japanese izakaya, a simple place without white tablecloths and glam, where you can come after work, eat well and drink. By the way, do not forget to try authentic Japanese sake when visiting. Whiskey connoisseurs will not be able to pass by the legendary Yamazaki. A cozy evening in Japanese style is guaranteed.
